Chicken Fiesta Rice

Chicken Fiesta Rice

Number of Servings: 4

1 1/2 Cup Brown Rice
1 Can black beans
1 Cup frozen corn
1 tomato
1 Scallions
4 Tablespoon cilantro
2 Tablespoon Fresh Lime, juice
1 Teaspoon garlic powder
1 Teaspoon Onion Powder
1 Teaspoon Redmond salt
1/2 Teaspoon black pepper
1/2 Cup Black Olives
1 Tablespoon sour cream
1 Pound chicken breast


1. In a pan with your cooked rice, add the black beans and corn and heat on the stove until it is warm.
2. Take the pan off the heat and add the diced tomato, scallions, cilantro, lime juice, garlic powder, onion powder, salt and pepper.
3. Stir everything together until combined.
4. Serve on a plate and add a tablespoon of sour cream and some diced black olives on top for added flavor if desired.
5. Serve alongside with some chicken or hamburger. Or do what we do, and combine everything in a bowl. It is like having a burrito but without the shell.
