Coconut Flour Pancakes (Gluten Free)

2 Teaspoon Coconut Oil
1/2 Teaspoon vanilla extract
1/2 Teaspoon cinnamon
1/2 Teaspoon baking soda
1 Teaspoon honey
4 Tablespoon Coconut Flour
1 Scoop Vanilla Protein Powder
1 Pinch salt
1 Mixed Berries (fresh or frozen)
1. In a bowl, add all the wet ingredients and whisk together until well blended.
2. Add the dry ingredients to the wet mixture, and whisk again until well blended and frothy — this will get them even fluffier.
3. Add additional coconut oil to a frying pan on medium low heat. Once warm, pour the batter into pan, keeping pancakes small. Keep the heat low and let the pancakes heat up slowly and rise about 3-5 minutes.
4. When bubbles appear, flip each pancake and let the other side cook. Move pancakes to a plate and continue the process until there is no batter left.
