Greek Salad

1/4 Cup olive oil
4 Tablespoon red wine vinegar
2 garlic
2 Teaspoon salt
1 Teaspoon black pepper
1/2 lemon
3 diced tomatoes
1 red onion
1 Cucumber
1/2 Can Artichoke Hearts
1 red bell pepper
1/2 Cup Flat Leaf Parsley
1 shallot
1 Teaspoon Dried Oregano
1 Cup Katamala Olives
1 Feta Cheese


Combine the olive oil, red wine vinegar, garlic, salt, pepper and lemon juice in a bowl and whisk to blend.
Combine tomatoes, red onion, cucumber, artichoke, pepper, parsley, shallot, oregano, and olives in a serving bowl with the dressing and stir. Add more salt and pepper to your liking. Have Feta cheese on the side and let people add to dish themselves.
