Zucchini “Mashed Potato” with Mint

2 zucchini
1 Teaspoon Fresh Mint
1 Pinch salt


1. Cut zucchini into chunks or rounds and place into steamer basket. Pop on a lid asteam for about 6-8 minutes or until the zucchini is nice and tender.
2. Puree cooked zucchini in a food processor along with the mint until it is smooth. You won’t need extra liquid since the zucchini already holds a lot of water.
3. You can add a dab of butter or olive oil if you want to make it a little richer. I usually give it just an itsy-bitsy pinch of salt.
